Executive Chef / Restaurateur Giovan Calapai
Having grown up and worked in his father’s former restaurants “The Blue Grotto”, “Gustave's” and “GIO’s”; Giovan discovered his passion for the restaurant business. In 1998 Giovan along with his father Giuseppe Calapai established their family owned restaurant, Bella. Giovan worked along side his father learning every aspect of the business. It was then, at the early age of 18 when Giovan’s natural ability was realized while assisting in the kitchen; and it has been there that he has honed his skills.
Giovan thrives on immediate gratification, his fervor for food and the satisfaction of his patrons is what drives him. This is evident, as he has one of the most extensive menus in New England showcasing Traditional Italian favorites alongside his exceptional weekly specials. Perhaps it is his innate ability to experiment with ingredients and create dishes that are both innovative and compelling that make his weekly specials (known as) his “Select Menu” so popular among his clientele.
Giovan admits that each day brings many challenges as well as long hours; but his insatiable passion for experimenting with food and reveling in the restaurants success is what drives him on.
